InstaPot Beef Tips and Gravy with Mushrooms and Onion

Instapot Beef Tips & Gravy made with Portabella Mushroom and Onion is a simply yet delicious twist to this classic dish!



  • 1 tablespoon Avocado Oil
  • 1 pound Beef Stew
    • 1/4 teaspoon Sea Salt
    • 1/4 teaspoon Garlic Powder
    • 1/8 teaspoon Onion Powder
    • 1/8 teaspoon Pepper
  • 1/2 cup chopped Portabella Mushrooms
  • 1/2 cup chopped Onion
  • 1 teaspoon Minced Garlic
  • 2 cups Beef Stock
  • 2 tablespoon Arrowroot or Tapioca Flour (or 1/4 teaspoon Xanthum Gum for Keto) dissolved in 2 tablespoon room temperature water
  • Gravy Seasoning 
    • 1/2 teaspoon dried Crushed Rosemary (you can crush regular rosemary so you don’t have the bigger pieces)
    • 1/2 teaspoon Sea Salt
    • 1/2 teaspoon Garlic
    • 1/4 teaspoon dried Ground Thyme


Cooking Instructions for Beef Tips and Gravy:

(Dairy Free Mashed Potatoes and Garlic and Chive Cauliflower Mash below)

  1. Turn your Instapot Sauté function on and add Avocado Oil, allow to heat up as you prep the beef
  2. With a paper towel pat dry you beef to remove the excess moisture and season with Beef Seasoning
  3. Add the seasoned beef to the Instapot, spread out, sautéing for 2 minutes, flipping and sautéing another 2 minutes
  4. Remove the Beef to a plate or bowl and add the mushrooms, sauté for 2 minutes
  5. Add the onion and saute for 5 minutes
  6. Add minced garlic and sauce for one minute
  7. Add the beef stock and the slurry, stirring as you add the slurry
  8. Add the beef back in and the Gravy Seasoning
  9. Put the lid and on turn on the Meat/Stew function and set it for 10 minutes
  10. Wait 5 minutes, then release the preassure
  11. Allow to cool and ENJOY
