Quinoa Tomato Cucumber, and Feta served with Italian Dressing is the perfect summer salad!  Easy to double or triple this recipe for meal prep or larger parties!!!

Ingredients

Units Scale

Salad:

  • 4 cups of cooked Quinoa (2 cups uncooked)
  • 1 cup chopped Tomato
  • 1 cup chopped Cucumber
  • 1/2 cup Feta Cheese (optional)
  • 3/4 cup Italian Dressing (reserve the remaining 3/4 cup)

Italian Dressing:

  • 1 cup Olive Oil
  • 1/2 cup Apple Cider Vinegar
  • 1 teaspoon Dried Basil
  • 1 teaspoon dried Oregano
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Dijon Mustard

Instructions

  1. In a mixing bowl, add cooked quinoa, tomatoes, cucumbers, feta, and Italian dressing
  2. Cover and refrigerate for 3-4 hours before serving
  3. Add additional dressing if you choose
  4. ENJOY!!

Notes

* Soak your quinoa for a few hours before hand for better digestion and nutrient absorpstion.
