Instant Pot Beef Tips & Gravy made with Portabella Mushroom and Onion is a simply yet delicious twist to this classic dish!

Ingredients

Units Scale
  • 1 tablespoon Avocado Oil
  • 1 pound Beef Stew
    • 1/4 teaspoon Sea Salt
    • 1/4 teaspoon Garlic Powder
    • 1/8 teaspoon Onion Powder
    • 1/8 teaspoon Pepper
  • 1/2 cup chopped Portabella Mushrooms
  • 1/2 cup chopped Onion
  • 1 teaspoon Minced Garlic
  • 2 cups Beef Stock
  • 2 tablespoons Arrowroot or Tapioca Flour (or 1/4 teaspoon Xanthum Gum for Keto) dissolved in 2 tablespoon room temperature water
  • Gravy Seasoning
    • 1/2 teaspoon dried Crushed Rosemary (you can crush regular rosemary as well)
    • 1/2 teaspoon Sea Salt
    • 1/2 teaspoon Garlic
    • 1/4 teaspoon dried Ground Thyme

Instructions

Cooking Instructions for Beef Tips and Gravy:

(Dairy Free Mashed Potatoes and Garlic and Chive Cauliflower Mash below)

  1. Turn your Instant Pot Sauté function on and add Avocado Oil; allow to heat up as you prep the beef
  2. With a paper towel, pat dry your beef to remove the excess moisture and season with Beef Seasoning
  3. Add the seasoned beef to the Instant Pot, spread it out, sauté for 2 minutes, flip it, and sauté it for another 2 minutes.
  4. Remove the beef to a plate or bowl, add the mushrooms, and sauté for 2 minutes.
  5. Add the onion and saute for 5 minutes
  6. Add minced garlic and saute for one minute
  7. Add the beef stock and the slurry, stirring as you add the slurry
  8. Add the beef back in and the Gravy Seasoning
  9. Put the lid on, turn on the Meat/Stew function, and set it for 10 minutes.
  10. Wait 5 minutes, then release the pressure
  11. Allow to cool and ENJOY
