Made in the Instant Pot this delicious dish makes for a simple weeknight dinner. Made with beef sirloin, mushroom and onion make this flavorful gravy. I live for a good comfort dish, there is something so satisfying about them no matter what season. And of course any vessel for Mashed Potatoes I will take!

How to Make Instant Pot Beef Tips and Gravy with Mushrooms & Onion:
Start by turning your Instant Pot on sauté and add Avocado Oil. While heating up pat dry your beef sirloin and season with salt & pepper. Add the meat to the Instant Pot on piece at a time ensuring they are not touching (might have to cook 2 batches). Allow to cook for 2 minutes and flip. If the meat stick to the bottom allow it to cook for another minute till it easily comes up.
Once the beef sirloin is cooked place it on the plate and add onion and portabella mushrooms, saute for 5 minutes. Add minced garlic and sauce for another minute. Once fragrant add the beef stock or beef broth, seasonings and allowing to heat. While heating make your slurry and add it. Stir until everything is combined, once combined add the beef sirloin back in, cover and cook for 10 minutes on the stew function.

Ingredients
- 1 tablespoon Avocado Oil
- 1 pound Beef Stew
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon Garlic Powder
- 1/8 teaspoon Onion Powder
- 1/8 teaspoon Pepper
- 1/2 cup chopped Portabella Mushrooms
- 1/2 cup chopped Onion
- 1 teaspoon Minced Garlic
- 2 cups Beef Stock
- 2 tablespoon Arrowroot or Tapioca Flour (or 1/4 teaspoon Xanthum Gum for Keto) dissolved in 2 tablespoon room temperature water
- Gravy Seasoning
- 1/2 teaspoon dried Crushed Rosemary (you can crush regular rosemary so you don't have the bigger pieces)
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon Garlic
- 1/4 teaspoon dried Ground Thyme
Instructions
Cooking Instructions for Beef Tips and Gravy:

- Turn your Instant Pot Sauté function on and add Avocado Oil, allow to heat up as you prep the beef
- With a paper towel pat dry you beef to remove the excess moisture and season with Beef Seasoning
- Add the seasoned beef to the Instant Pot, spread out, sautéing for 2 minutes, flipping and sautéing another 2 minutes
- Remove the Beef to a plate or bowl and add the mushrooms, sauté for 2 minutes
- Add the onion and saute for 5 minutes
- Add minced garlic and sauce for one minute
- Add the beef stock and the slurry, stirring as you add the slurry
- Add the beef back in and the Gravy Seasoning
- Put the lid and on turn on the Meat/Stew function and set it for 10 minutes
- Wait 5 minutes, then release the preassure
- Allow to cool and ENJOY
