How to Make Instant Pot Beef Tips and Gravy with Mushrooms & Onion:
Start by turning your Instant Pot on sauté and add Avocado Oil. While heating up, pat dry your beef sirloin and season with salt & pepper. Add the meat to the Instant Pot one piece at a time, ensuring they are not touching (you might have to cook two batches). Allow it to cook for 2 minutes and flip if the meat sticks to the bottom. Allow it to cook for another minute till it quickly comes up.
Once the beef sirloin is cooked, place it on the plate, add onion and portabella mushrooms, and saute for 5 minutes. Add minced garlic and saute for another minute. Once fragrant, add the beef stock or beef broth and seasonings and allow to heat. While heating, make your slurry and add it. Stir until everything is combined; add the beef sirloin back in, cover, and cook for 10 minutes on the stew function.

Instant Pot Beef Tips & Gravy made with Portabella Mushroom and Onion is a simply yet delicious twist to this classic dish!

Ingredients
- 1 tablespoon Avocado Oil
- 1 pound Beef Stew
- ¼ teaspoon Sea Salt
- ¼ teaspoon Garlic Powder
- ⅛ teaspoon Onion Powder
- ⅛ teaspoon Pepper
- ½ cup chopped Portabella Mushrooms
- ½ cup chopped Onion
- 1 teaspoon Minced Garlic
- 2 cups Beef Stock
- 2 tablespoons Arrowroot or Tapioca Flour (or ¼ teaspoon Xanthum Gum for Keto) dissolved in 2 tablespoon room temperature water
- Gravy Seasoning
- ½ teaspoon dried Crushed Rosemary (you can crush regular rosemary as well)
- ½ teaspoon Sea Salt
- ½ teaspoon Garlic
- ¼ teaspoon dried Ground Thyme
Instructions
Cooking Instructions for Beef Tips and Gravy:

- Turn your Instant Pot Sauté function on and add Avocado Oil; allow to heat up as you prep the beef
- With a paper towel, pat dry your beef to remove the excess moisture and season with Beef Seasoning
- Add the seasoned beef to the Instant Pot, spread it out, sauté for 2 minutes, flip it, and sauté it for another 2 minutes.
- Remove the beef to a plate or bowl, add the mushrooms, and sauté for 2 minutes.
- Add the onion and saute for 5 minutes
- Add minced garlic and saute for one minute
- Add the beef stock and the slurry, stirring as you add the slurry
- Add the beef back in and the Gravy Seasoning
- Put the lid on, turn on the Meat/Stew function, and set it for 10 minutes.
- Wait 5 minutes, then release the pressure
- Allow to cool and ENJOY
