Cauliflower has become a go-to healthy substitute for many starchy/high-carb foods. It is an excellent substitute for pizza crust, potatoes, and rice! It took some time for me; the taste is different. If you follow this site, you will likely know I LOVE MY MASHED POTATOES. I don't like them all fancy or "dolled up," I love classic, easy, simple mashed potatoes. So, when trying the traditional type of mashed potatoes, I couldn't get on board. When I started adding different seasonings to Mashed Cauliflower, I enjoyed them more and more.

I love Garlicky Roasted Cauliflower, so I tried adding Garlic and fell in love, and that became the go-to way to make them. Recently, we went out and had mashed potatoes with chives on them. The chives added such a great but subtle flavor. I would have never thought of adding chives to mashed potatoes. I made mashed potatoes and added some chives to see how it worked with the cauliflower… it was even better than the mashed potatoes.

How to make:

Garlic and Chive Mashed Cauliflower are not only healthy and delicious, but they are easy to make. You can use fresh cauliflower or frozen cauliflower. For fresh cauliflower, steam for about 20 minutes until fork tender. By fork tender, I mean you want it "soft." If it is still "hard," you won't be able to get it as creamy as you might wish to. If you are using frozen cauliflower, follow the instructions. Again, make sure it is manageable.


Once cooked, add all your ingredients to a food processor and process on high till the cauliflower is creamy and smooth. You can also use a hand mixer or a mixer. It takes a little longer to get out all the chunks. I don't mind them, and sometimes it is easier to get out the hand mixer versus the food processor, and there is less to clean up.

Dairy Free Mashed Cauliflower flavored with Garlic and Chives!

  • Total Time: 10-30 minutes
  • Yield: 6 servings 1x

Ingredients

Units Scale
  • 2 pounds frozen/raw Cauliflower
  • ¼ cup water
  • 2 tablespoon Ghee
  • ¼ cup Nutpods (or Cashew Milk)
  • ¼ cup Chicken Stock
  • 1 tablespoon Freeze Dried Chives
  • 1 teaspoon Garlic
  • ½ teaspoon Sea Salt
  • ¼ teaspoon Black Pepper
  • ¼ teaspoon Paprika

Instructions

  1. Steam/Cook Cauliflower until fork tender
  2. In a food processor add the cooked cauliflower and the remaining ingredients, processing on high until creamy and smooth.  If you don't have a food processor you can you a mixer/hand mixer, it might take a little longer to get smooth.
  3. You can top with Butter and Fresh Chives
  4. ENJOY!
