Lemon Basil Chicken is a quick and easy weeknight dinner that is one of my favorite dishes. The light lemon taste with basil is the perfect combination giving your chicken a tangy twist. I am all about Chicken with a sauce right now that can be used to flavor whatever starch you are pairing it with making. It makes for a quick easy delicious weeknight dinner.

How to make Lemon Basil Chicken:

Start by gathering your ingredients: Chicken Breast, Sea Salt, Pepper, Garlic Powder, Onion Powder, Paprika, Tapioca (or Arrowroot), Chicken Broth, 1 Lemon and Fresh Basil. Heat Avocado Oil over medium low heat. Next, pound your chicken till it is ½ inch thick and pat it dry, removing extra moisture. Combine Sea Salt, Pepper, Garlic Powder, Onion Powder, and Paprika Sprinkling it over each side of your Chicken Breast. You can dredge the Chicken in Tapioca Flour or you can just sprinkle it on and rub it around using your hand like I do. Less dishes and less messy if you ask me.

Place you coated Chicken Breast in the hot oil, allowing to cook for about 3 minutes. You will know it is ready to flip when it no longer sticks to the bottom of the pan. Make sure it has a nice golden color to it too! Allow to cook another 3 minutes, removing and put on a separate plate. Turn heat to medium, add Chicken Broth, Sea Salt and Tapioca Slurry (1 tablespoon Tapioca and 2 tablespoon cold water mixed), stirring till combined, allow to come to a bubble. Reduce heat to low, add chicken and any juice that have collected in the plate. Top with a lemon, cover and cook. You can flip the chicken halfway through (about 15 minutes), covering with sauce.

I love it with Mashed Potatoes using the sauce as a gravy with Spicy Green Beans. You can easily serve it with Noodles, Cauliflower Mash, Cauliflower Rice, Spaghetti Squash and Rice!

Lemon Basil Chicken is a quick and easy weeknight dinner that is one of my favorite dishes. The light lemon taste with basil is the perfect combination giving your chicken a tangy twist making for a quick easy delicious weeknight dinner.

Ingredients

Units Scale
  • 2 tablespoons Avocado/Olive Oil
  • 4 chicken breast (2 pounds)
  • 2 tablespoon Tapioca Flour (or Arrowroot Flour)
  • ¼ cup Fresh Basil
  • 2 cups Chicken Broth
  • 1 tablespoon Lemon Juice
  • 4 slices of Lemon
  • ¼ teaspoon Sea Salt
  • ¼ teaspoon Garlic Powder

Chicken Breast Seasoning:

  • ¼ teaspoon Sea Salt
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Paprika
  • ⅛ teaspoon Pepper
  • ⅛ teaspoon Onion Powder

Instructions

  1. Add Oil to sauté pan over medium-low heat.
  2. Remove your chicken from the package and pat each side dry with a paper towel.
  3. Combine your chicken seasoning and coat each side with the seasoning.  
  4. Coat each side with Tapioca (or Arrowroot Flour). One tablespoon should coat one side of each chicken breast.
  5. Place chicken in a heated sauté pan for about 3 minutes and flip again for 3 more minutes.  Note: If the chicken sticks to the pan it is not ready to flip, give it another 30 seconds and try again. 
  6. Remove the chicken and set aside on a plate.  Add your teaspoon of Garlic and saute for 1 minute.
  7. Increase the heat to medium, add the chicken broth, and scrape all the pieces off the bottom of the saute pan from the chicken.
  8. Add the Basil, Lemon Juice, and Sea Salt. Bring to a Simmer (low boil) reduce heat to low and add the chicken back to the sauté pan, adding any juices from the plate.  
  9. Place a lemon slice on each chicken breast, cover, and cook for 25 minutes.
  10. Remove from heat and cool for 5 minutes, sauce should be nice and thick.
  11. Serve with Mashed Potatoes, Rice, Noodles or whatever starch you prefer and ENJOY!
