- 2 tablespoons Avocado/Olive Oil
- 4 chicken breast (2 pounds)
- 2 tablespoon Tapioca Flour (or Arrowroot Flour)
- 1/4 cup Fresh Basil
- 2 cups Chicken Broth
- 1 tablespoon Lemon Juice
- 4 slices of Lemon
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon Garlic Powder
Chicken Breast Seasoning:
- 1/4 teaspoon Sea Salt
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon Paprika
- 1/8 teaspoon Pepper
- 1/8 teaspoon Onion Powder
Instructions
- Add Oil to sauté pan over medium-low heat.
- Remove your chicken from the package and pat each side dry with a paper towel.
- Combine your chicken seasoning and coat each side with the seasoning.
- Coat each side with Tapioca (or Arrowroot Flour). One tablespoon should coat one side of each chicken breast.
- Place chicken in a heated sauté pan for about 3 minutes and flip again for 3 more minutes. Note: If the chicken sticks to the pan it is not ready to flip, give it another 30 seconds and try again.
- Remove the chicken and set aside on a plate. Add your teaspoon of Garlic and saute for 1 minute.
- Increase the heat to medium, add the chicken broth, and scrape all the pieces off the bottom of the saute pan from the chicken.
- Add the Basil, Lemon Juice, and Sea Salt. Bring to a Simmer (low boil) reduce heat to low and add the chicken back to the sauté pan, adding any juices from the plate.
- Place a lemon slice on each chicken breast, cover, and cook for 25 minutes.
- Remove from heat and cool for 5 minutes, sauce should be nice and thick.
- Serve with Mashed Potatoes, Rice, Noodles or whatever starch you prefer and ENJOY!
