Lemon Basil Chicken is a quick and easy weeknight dinner that is one of my favorite dishes. The light lemon taste with basil is the perfect combination giving your chicken a tangy twist making for a quick easy delicious weeknight dinner.

Ingredients

Scale
  • 2 tablespoons Avocado/Olive Oil
  • 4 chicken breast (2 pounds)
  • Chicken Breast Seasoning:
    • 1/4 teaspoon Sea Salt
    • 1/4 teaspoon Garlic Powder 
    • 1/4 teaspoon Paprika
    • 1/8 teaspoon Pepper
    • 1/8 teaspoon Onion Powder
  • 2 tablespoon Tapioca Flour (or Arrowroot Flour)
  • 1/4 cup Fresh Basil
  • 2 cups Chicken Broth
  • 1 tablespoon Lemon Juice 
  • 4 slices of Lemon
  • 1/4 teaspoon Sea Salt
  • 1/4 teaspoon Garlic Powder

Instructions

  1. Add Oil to sauté pan over medium-low heat.
  2. Remove you chicken from the package and pat each side dry with a paper towel.
  3. Combine your chicken seasoning and coat each side with the seasoning.  
  4. Coat each side with your Tapioca (or Arrowroot Flour). One tablespoon should coat one side of the four chicken breast.
  5. Place chicken in heated sauté pan for about 3 minutes and flip for another three minutes.  Note: If the chicken sticks to the pan it is not ready to flip, give it another 30 seconds or so and try again. 
  6. Remove the chicken and set aside on a plate.  Add your teaspoon of Garlic and saute for 1 minute.
  7. Increase heat to medium and addd the chicken broth and scrap all the pieces off the bottom of the saute pan from the chicken.
  8. Add the Basil, Lemon Juice and Sea Salt. Bring to a Simmer (low boil) reduce heat to low and add the chicken back to the sauté pan, adding any juices from the plate as well.  
  9. Place a lemon slice on each chicken breast, cover and cook for 25 minutes.
  10. Remove from heat and cool for 5 minutes, sauce should be nice and thick.
  11. Serve with Mashed Potatoes, Rice, Noodles or whatever starch you prefer and ENJOY!
