Sweet Potato Stuffing is my twist to a grain free stuffing type side dish. One of my many favorite side dishes during the holiday seasoning is stuffing. Not just plan stuffing but I like to add sausage to mine, use fresh parsley. Last year I was making a big batch of my Sausage Sweet Potato and Kale Hash and came to the realization I loved it so much because it tasted like stuffing!
Every holiday I usually make a triple or quadruple batch, not because I have to feed a lot of people, I just love it. Even if we are not hosting dinner, I always make a big thanksgiving meal so I can safely enjoy not only the meal, but leftovers for days to come! (I have celiac disease) I am a creature of habit and love to mix everything in one bowl and top it with the Gravy I made from Turkey drippings.

After a few days though all the grains start to irritate my stomach. Therefore, I decided to try to make a grain free stuffing. My breakfast Sausage Sweet Potato and Kale Hash already tasted like stuffing. I just made a few minor adjustments and came up with this twist. Why reinvent something that is already amazing? You can use any sausage but the combination of flavors in this recipe is my favorite!
Like my Sausage Sweet Potato and Kale Hash I cook it in my Dutch oven. If you don’t have a dutch oven you can use a regular pot and lid. You will have to adjust you cooking times/stirring times accordingly. Make sure to keep you temperature low so it does not burn on the bottom (lesson learned a few times)

Sweet Potato Stuffing is easy to make. You start by browning the sausage in oil. While the sausage is browning you chop the sweet potatoes into cubes, dicing the celery and onion. Once sausage is done add all the remaining ingredients into you Dutch oven. Cover and cook for ** minutes over low heat. I usually stir it every 7-10 minutes.
In case you were wondering my favorite brand is Gillian’s Gluten Free Stuffing. This is the first gluten free stuffing I tried and it is still my favorite! I have tried other Gluten Free brands but they are not the same.

Ingredients
- 1 tablespoon Avocado/Olive Oil
- 1 pound Ground Pork
- 1 cup diced Onion
- 1 cup diced Celery
- Sausage Seasoning
- 1 tablespoon Sage
- 1 teaspoon Sea Salt
- 3/4 teaspoon Thyme
- 1/2 teaspoon Onion Powder
- 1/4 teaspoon Garlic Powder
- 1/4 teaspoon Celery Seed
- 1/4 teaspoon Black Pepper
- 1/4 teaspoon Nutmeg
- 1/4 cup Chicken Broth or Water
- 3 pound Sweet Potato cut into 1 inch cubes
- 1 Teaspoon Sea Salt
Instructions
- Add the Oil to a pan and heat over medium-low heat
- Add the onions and celery and sauce for five minutes
- Add the Meat and Sausage Seasoning stirring until combined
- Cover, stirring every few minutes until Meat is cooked
- Once meat is cooked add the remaining ingredients, stirring so everything is combined.
- Cover and allow to cook over low/medium-low for 35-40 minutes stirring occasionally
- Once cooked, remove from heat and allow to sit covered
