Steak and Arugula Salad has been on repeat in my house lately! I prefer my balsamic-marinated steak, but you can use any steak. What makes this Salad amazing is a simple yet delicious dressing! This Salad is unique because you can make it the day before, dressing and all, and it stays cool. Arugula holds up nicely. If you are using any other type of lettuce, I suggest putting the dressing on when you are ready to eat it.Â
How to make Steak & Arugula Salad:
Start by making the dressing; you want to allow it to sit ideally for at least 15 minutes. You can make a big batch of dressing in advance, which will stay in the fridge for up to 4 days. Add 2-3 tablespoons of dressing to 2 cups of Arugula and toss, massaging the dressing in and softening the Arugula. Add the tomatoes, onion, steak, and pepper. You can use hot steak using Arugula; if you use a different kind of lettuce, I will allow it to cool. Sizzling steak can make the salad a little soggy.
Don’t have steak? You can easily sub my Pork Bites; they are delicious as well! You can change it up by sautéing the peppers and or onions if you choose. I am a creature of habit and can eat the same thing day after day just by making little modifications to it, adding a different sauce, veggie, etc. Are you able to eat the same thing over and over? Ingredients
Basil Balsamic Dressing:
- ½ cup Olive Oil or Avocado Oil
- ¼ cup Balsamic Vinegar
- 1 teaspoon Dried Basil / ½ teaspoon fresh Basil
- 1 teaspoon Dijon Mustard
- 1 teaspoon Lemon Juice
- ¼ teaspoon Sea Salt
- ¼ teaspoon Garlic Powder
Large Steak Salad
- 4 cups Arugula
- 1 cup Chopped Steak
- 1 cup Cherry Tomatoes
- ½ cup Red/Yellow/Orange Pepper
- ¼ cup Red Onion
- Basil Balsamic Dressing (you can add more or less if you like)
Instructions
- Make the dressing and allow it to sit for 20 minutes so the flavors can combine
