PALEO PEPPERMINT HOT CHOCOLATE has been my favorite winter drink so far. While out holiday shopping with my husband we decided to get Starbucks, he needed coffee, but being pregnant I already had my one cup and needed a caffeine free option. I got the peppermint hot chocolate and fell in love! The rich chocolate taste with the twist of peppermint. One of my few pregnancy cravings has been this drink so I decided I needed to make a healthier version that was easy to make at home.
How to make Paleo Peppermint Hot Chocolate:
In a saucepan heat Water, Cocoa, Peppermint and Honey over medium heat until honey and cocoa is dissolved. Add Cashew Milk or (dairy free) milk of your choice. I love cashew milk personally, it has a creamy taste like regular milk and no “off” taste like Almond and Coconut Milk. Reduce heat to medium low, heating for 4 minutes. Put into your favorite mug, add your preferred toppings and ENJOY! I top mine with Dandy Marshmallows (found at Wegmans) and Yum Candy Canes (Target and Amazon), both are cleaner options. You can also do a dairy free whip cream, or enjoy it plain.
If you don’t love the rich chocolate taste, then add 6 tablespoons of Cocoa instead of half a cup (8 tablespoons). You can also substitute 2 tablespoons of Maple Syrup for the 4 tablespoons of honey. I think you can taste the Maple Syrup, versus the honey which blends a little better. You can’t go wrong with either though!
