
Chicken Walnut and Grape Salad! Nothing is better than a lunch of mixed greens topped with delicious homemade Chicken Salad. What takes Chicken Salad to the next level is juicy Red Grapes, heart-healthy Walnuts, and crispy Celery. The twist to this Chicken Salad that makes it even more amazing is the addition of Tarragon and Paprika. The Tarragon adds a bit of sweetness while the Paprika adds a bit of zest! I played around with many different combinations of ingredients and spices till it was perfect. Everyone's taste is different, feel to change it up!
How to make Chicken Walnut and Grape Salad
First, you start with the chicken. The best way to cook it is to poach (boil) it or cook it in the InstantPot (easiest/quickest). You can also use leftover chicken, canned chicken, or rotisserie chicken. The Rotisserie Chicken will only add to the great flavors! Next, prepare your chicken. You can either cut it into chunks or shred it. I prefer shredded chicken as it makes the chicken-to-dressing ratio that much better. Tip: to shred your chicken, use a hand or stand mixer! Be sure to use a high-sided bowl or partially cover it with a towel to prevent pieces of chicken from flying. This is a lesson learned the hard way!
Add the dressing ingredients to a bowl and stir till mixed then add the chicken. Stir until all the dressing and chicken are incorporated. Refrigerate for a few hours allowing the flavors to combine. (Note: it might not taste great right away, you need to let it sit and allow the flavors to combine!)
Chicken Salad is a go-to for a quick and satisfying lunch. Making it at home allows you to control what ingredients go into it, and how much. you can use chicken of your choice, homemade mayonnaise, or your favorite prepared mayonnaise. It allows you to make it egg-free, Whole30, Keto, or Paleo. If you like more of an ingredient you can add a little extra (like grapes!). If you do not love an ingredient you can add less or none.
Chicken Salad is an excellent source of protein and healthy fats. Yet it still tastes delicious. It is a great way to add a twist to the protein for your salad, in a wrap, or sandwich. You can easily make a big batch using it for lunches throughout the week. Making this dish at home will allow you to enjoy it a few days longer since you know exactly when you made it. Chicken Salad
Easy Chicken Walnut and Grape Salad with Grapes, Walnuts and Tarragon. Not only is it great on mixed greens but it is great sandwich or wrap! Whole30, Paleo, Keto and Gluten-Free!

Ingredients
Chicken
- 1 pound boneless chicken breast
- 6 cups of water
Salad
- Chopped/Shredded Chicken
- 1 cup of Mayo (make sure compliant if following Keto/Paleo/Whole30)
- 1 ½ Red Grapes, quartered
- 1 cup Celery, finely chopped
- ½ cup Walnuts, chopped
- ¼ cup Red onion, finely diced
- ½ teaspoon Tarragon
- ½ teaspoon Black Pepper
- ½ teaspoon Paprika
- ¼ teaspoon Sea salt
- ⅛ teaspoon Garlic Powder
Instructions
- Bring the 6 cups of water to a boil on the stovetop
- Add the Chicken, allowing to cook for about 35 mins till the chicken is 165 degrees
- Remove the Chicken from the water and either chop or shred (whatever your preference is)
- Add the Chicken and remaining ingredients to a bowl and mix until combined
- Store in the fridge for up to three days
